Apricot Pepper Melangé Glazed Cornish Game Hens

Yield: 4 servings
  • 2 18oz Cornish game hens, split in half
  • 1 C apricot preserves
  • 2 Tsp Two Snooty Chefs® Pepper Melangé Peppercorns
  • 2 Tsp fresh rosemary leaves pulled from stems
  • 1 C white wine 
  1. Preheat oven to 350°F
  2. Place split Cornish game hen halves on a baking sheet breast side up
  3. Make the glaze by placing the apricot preserves in a small sauce pan and heating through
  4. Place Two Snooty Chefs® Pepper Melangé Peppercorns in a mortar and crush with pestle till coarse grind - add to heated preserves
  5. Chop the rosemary and add to the heated preserves
  6. Heat preserves till hot and set aside
  7. Glaze each game hen half with 2 Tbsp of the glaze, place in the oven on middle rack, roast 30 minutes, glazing every 10 minutes
  8. Tent game hens with foil and cook another 20-30 minutes, glaze one last time as they come out of the oven, internal temperature should be 165°F on an instant read thermometer 
  9. Serve to your loved ones!
