Apricot Pepper Melangé Glazed Cornish Game Hens
Yield: 4 servings
Ingredients:
- 2 18oz Cornish game hens, split in half
- 1 C apricot preserves
- 2 Tsp Two Snooty Chefs® Pepper Melangé Peppercorns
- 2 Tsp fresh rosemary leaves pulled from stems
- 1 C white wine
Procedure:
- Preheat oven to 350°F
- Place split Cornish game hen halves on a baking sheet breast side up
- Make the glaze by placing the apricot preserves in a small sauce pan and heating through
- Place Two Snooty Chefs® Pepper Melangé Peppercorns in a mortar and crush with pestle till coarse grind - add to heated preserves
- Chop the rosemary and add to the heated preserves
- Heat preserves till hot and set aside
- Glaze each game hen half with 2 Tbsp of the glaze, place in the oven on middle rack, roast 30 minutes, glazing every 10 minutes
- Tent game hens with foil and cook another 20-30 minutes, glaze one last time as they come out of the oven, internal temperature should be 165°F on an instant read thermometer
- Serve to your loved ones!
