Kansas City Smoked Bleu Burgers
Yield: 4 servings
Ingredients:
- 1 lb lean ground beef
- 1 Tbsp Two Snooty Chefs® Kansas City Steak Gourmet Spice Blend
- 4 oz smoked bleu cheese – we use Crimson Cove Alder Smoked Bleu
- ½ C roasted garlic walnut aioli (recipe follows)
- 4 lettuce leaves
- 4 slices beefsteak tomatoes
- 4 slices red onion
- 4 whole grain buns
Procedure:
- Place the ground beef in a large bowl and season with Two Snooty Chefs® Kansas City Steak Gourmet Spice Blend – mix well to combine
- Portion into four patties; indent the center of each patty; place ¼ of the smoked bleu cheese into the center; fold over to enclose the cheese; form once again into patty
- Grill patties 5-6 minutes per side or until burger is 155°F internal temperature with insta-read thermometer
- Toast the buns on the grill
- Serve with lettuce, tomato, red onion, and roasted garlic walnut aioli
Roasted Garlic Walnut Aioli
Ingredients:
- 12 large cloves of garlic that you have roasted
- 2 large egg yolks
- 1 lemon, juiced
- ¼ tsp salt
- Pinch of cayenne pepper
- 1 ½ C walnut oil
- ¼ C walnuts toasted and finely chopped
Procedure:
- In the bowl of a blender place the roasted garlic, egg yolks, lemon juice, salt, and cayenne – blend to combine
- While the blender is on, slowly add walnut oil and keep blending until thick
- Place in a bowl, add finely chopped walnuts and mix to combine
- Chill till service
- Spread on toasted burger
