White Chocolate & Raspberry Frozen Soufflé
The dessert is one that is great for a sweet touch in Valentine. Make it up ahead of time and keep frozen for the special "Snooty One" in your life. Happy Valentine!
Yield: 4 servings
Ingredients:
- 1 C heavy cream
- 1 C finely chopped white chocolate
- ¼ C honey
- 2 Tbs water
- ½ C egg yolks
- 4 Tbs raspberry preserve
- 4 oz seasonal fresh fruit
- 6 Tbsp softened butter
- Two Snooty Chefs® Sel Gris De Guerande sea salt to taste
Procedure:
- Prepare soufflé dishes; line outside with acetate to reach 2 inches above the dish and secure with clear tape
- Whip heavy cream and set aside
- Heat white chocolate and keep at room temperature
- Bring honey and water mixture is cooking
- Start beating the egg yolks in a mixer. Beat until eggs are thick
- Then add hot honey water mixture slowly, beating until cool and beat in the white chocolate and then fold in the whipped cream
- Add Two Snooty Chef® Sel Gris De Guerande Sea Salt
- Fill bottom of each soufflé dishes with 1 Tbs raspberry preserve
- Divide the soufflé mixture and fill each dish
- Freeze for at least 4 hours
- Remove the acetate wrapping; and top with seasonal fruit and fresh raspberries
